“Admiral Malt makes a minuscule fraction, far less than 0.01% of the malt in California,” says Ron Silberstein, co-founder of Admiral Maltings. “For Admiral Maltings to have three beers, that by definition must showcase the finest malt flavors, win 2 Golds and a Silver is an incredible achievement by any measure. It validates our attention to sourcing a barley developed specifically for the climate and terroir of the Sacramento Valley, grown using sustainable farming methods (including No-Till and Certified Organic), to provide freshly kilned, California floor malt to California craft breweries.”
Since opening in August 2017, Admiral Maltings has triumphantly resurrected the age-old art of traditional floor malting and has catapulted craft malt to the forefront of California’s modern era of brewing and distilling. Admiral has changed the game for West Coast brewers/distillers who now have unparalleled access to freshly kilned malt sourced from sustainable barley from the Sacramento Valley. With 1,000 tons of malt kilned thus far, an avalanche of 500 unique, new beers have been brewed with Admiral’s top-shelf malt varieties by more than 250 of the foremost California breweries, as well as a dozen regional distillers using Admiral Malts for a new wave of California single malt whiskies.
Adjacent to Admiral Malting’s germination floor sits a pub unlike any other in the world at The Rake. With its intimate view of the floor malting process in action, Admiral offers a dynamic beer list (20 taps) highlighting the ingenuity with which their brewery customers deploy the company’s malt. The Rake is a mecca for beer geeks and general beer lovers alike with its constant rotation of freshly brewed beers made with Admiral malt, including many special releases. In addition to its draught program, The Rake also sells canned and bottled beers to-go and has instituted selling Admiral Malt by the pound for homebrewers. In some months, Admiral will begin to sell the first spirits distilled from its malt produced by regional distilleries.
Beginning in October 2019, The Rake welcomes a new General Manager Dennis Yadroff, who is one of the founders of Lost & Found (Oakland, Calif.) as well as a former GM at The Hog’s Apothecary (Oakland, Calif.), and Director of Retail & Communications at ol’ Republic Brewery (Nevada City, Calif.). The Rake is a must-visit destination for locals and out-of-town visitors with its cured meats, cheeses, pates, hot sandwiches, snacks & bites, and soups & salads. San Francisco Chronicle put The Rake on its shortlist of “The Bay Area’s Best New Places to Drink” in 2018.
Admiral Maltings is hard at work trendsetting the local malt movement throughout California with their eye on the prize to encourage craft brewers/distillers in all corners of the country to embrace locally sourced, high quality and eco-friendly ingredients.
